Chicken curry

  • 4 onions chopped finely ( in the food processor)
  • 4 Tomatoes skinned and chopped
  • 1 Tin tomatoes
  • Fresh Ginger
  • 1 strip Nice ‘N Spicy Mild Cape Curry ( available from Spar or Pick ‘n Pay) or use your own
  • 4 Garlic Cloves
  • Mushrooms ( optional)
  • Salt and pepper
  • 1 Kg chicken breasts ( plus/minus) it doesn’t really matter


  1. Saute the onions and garlic in 1 T olive oil until soft
  2. Add garlic ginger and first 2 strips in curry pack or just add your own curry powder, tumeric and spices
  3. Add mushrooms if you like
  4. Simmer for about 30 to 40 minutes
  5. Cut the chicken breasts into strips and add to tomato mixture with rest of the spices
  6. Simmer for about 10 minutes – don’t overcook
  7. Serve with a mountain of stir fry vegies and coriander
  8. You can top with fat free yorhurt
