Chunky vegetable soup

 

Ingredients:
2 large onions
200gms  shin (just for flavour)
4 carrots
2 large leeks
3 sticks celery
1 small butternut
1 sweet potato ( optional)
500mls beef stock

Method:
Chop onions and saute in a non-stick pan with Spray and Cook.
Trim fat off shin and add to onions to brown.
Chop and slice the vegetables and add to onion.
Add the stock, salt and pepper and any other herbs.
Add 2 tablespoons of packet soup eg brown onion or beef stew (optional)
Simmer for about 30 mins
Delicious on a winters evening

Added ideas: You can always make the base soup and freeze it. Then when you’d want to eat it add some chicken, stirfried beef or lentils (lentils only in phase 2) for a bit of variety.
